9. Once the gooseberry cream is firm, remove a thick slice from the top of the ice without breaking it. Set aside.
10. Carefully scoop out a large portion of the ice from the center of the mould, creating a hollow.
11. Mix the scooped-out ice with the prepared gooseberry cream until well combined.
12. Fill the hollow of the mould with the gooseberry cream and ice mixture, smoothing the surface.
13. Place the previously removed slice on top of the filled mould, ensuring it fits perfectly without any gaps.
14. Return the mould to the freezer and allow the dessert to set completely for at least 2 to 3 hours, or until firm.
15. Once the dessert is thoroughly frozen, it is ready to be served. Carefully remove the mould and place A Juditha on a serving dish or platter.
16. Garnish with fresh gooseberries or mint leaves for an added touch of elegance.
