Kraut Kugel Recipe

Kraut Kugel Recipe

History and Fun Facts:
Kraut Kugel is a traditional Jewish dish that has been enjoyed for generations. It originated in Eastern Europe and is particularly popular in Jewish communities. Kugel, in general, is a baked pudding or casserole that is made with different ingredients such as noodles, potatoes, or in this case, cabbage.

The word "kugel" itself means "ball" or "sphere" in Yiddish, which is a nod to the traditional round shape of this dish. It has become a beloved comfort food, often prepared for holidays and family gatherings.

Now, let's dive into the recipe!

Ingredients:
- 1 large cabbage, chopped
- Fat or oil for stewing (such as vegetable oil or schmaltz)
- 1/4 loaf of bread
- Water (for soaking bread)
- 1/2 cup flour
- 1/2 cup brown sugar
- 1/8 pound raisins
- Finely chopped citron (desired amount)
- 1/4 pound almonds, mixed with a few bitter almonds
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- Juice and peel of 1 lemon
- 4 eggs

Instructions:

1. The day before preparing Kraut Kugel, start by chopping the cabbage into small pieces. Take your time and chop it finely for better texture. Set aside.

2. In a large pot or skillet, heat some fat or oil of your choice (such as vegetable oil or schmaltz). Slowly stew the chopped cabbage in the fat until it turns brown. This slow cooking process will bring out the rich flavors of the cabbage. Once it reaches the desired browning level, remove it from the heat and let it cool. This step can be done the day prior to making the kugel, allowing the flavors to develop even further.

3. On the day of making the kugel, preheat your oven to 350°F (175°C). Grease an iron pan or kugel pot well to avoid sticking.

4. Take 1/4 of a loaf of bread and soak it in water until it becomes soft. Squeeze out the excess water and crumble the bread. This will serve as a binding agent in the kugel.

5. In a mixing bowl, combine the stewed cabbage with the soaked bread crumbs, flour, brown sugar, raisins, finely chopped citron, almonds, salt, cinnamon, allspice, juice and peel of one lemon, and four eggs. Mix all the ingredients thoroughly until well combined.

6. Pour the mixture into the greased iron pan or kugel pot. Make sure to distribute it evenly.

7. Place the kugel in the preheated oven and bake at a low temperature for a long time. The slow baking process allows the flavors to meld together and the kugel to set properly. Bake for approximately 1 to 1.5 hours, or until the top is golden brown and the center is set.

8. Once baked, remove the kugel from the oven and let it cool slightly before serving. Kraut Kugel can be enjoyed warm or at room temperature, and it can be served as a side dish or a main course.
