Lamb And Sprew. Recipe

Lamb and Sprew Recipe:
Preparation Time: 15 minutes
Cooking Time: 2 hours
Serving Size: 4 servings

History of the Recipe:
Lamb and Sprew is a traditional British dish that dates back to the 18th century. Sprew, also known as Asparagus Fern or Sprewing, is a type of vegetable native to Europe and Asia. It was commonly used in cooking during that time period due to its abundance and distinctive flavor. This recipe was popular amongst households and was considered a hearty and delicious meal.

Fun Facts:
- The word "sprew" is derived from the Old English word "spreaw," which means "spear" or "shoot." This refers to the resemblance of the vegetable's shoots to spears.
- Sprew is not actually asparagus, even though it is sometimes referred to as "asparagus fern." It is a type of evergreen perennial fern.
- Besides its culinary uses, sprew was also used in traditional medicine for its diuretic properties and as a tonic for strengthening the immune system.

Ingredients:
- 1 neck or breast of lamb
- Water, enough to cover the lamb
- 1 small head of celery, cut into small pieces
- 1 onion, finely chopped
- Pepper, to taste
- Salt, to taste
- 1 sprig of parsley
- 2 lumps of sugar

Instructions:
1. Start by preparing the lamb. Trim any excess fat and cut it into manageable pieces that will fit in your stewpan.
2. Place the lamb pieces in a large stewpan and pour in enough water to cover the meat completely.
3. Add the cut pieces of sprew, celery, onion, pepper, salt, and the sprig of parsley to the stewpan. These ingredients will enhance the flavor of the dish.
4. Bring the stewpan to a gentle simmer over low heat. Do not let it boil vigorously as this can toughen the meat. Let it simmer for approximately 2 hours or until the lamb and sprew are tender.
5. To further enhance the flavor, add two lumps of sugar to the stewpan. The sugar will balance the flavors and add a hint of sweetness.
6. While simmering, keep an eye on the liquid levels. Make sure there is not too much liquor left, and if there is, remove the excess. You want a thick and flavorful sauce for your dish.
7. Once the lamb and sprew are tender, remove the stewpan from the heat. Carefully remove any excess fat from the surface of the stew.
8. To serve, arrange the sprew around the lamb and spread it thickly over the meat. This presentation will make the dish visually appealing.
9. Serve the Lamb and Sprew with steamed vegetables, mashed potatoes, or your choice of side dishes. Enjoy!
