Cherry Sherbet Recipe

History and Fun Facts:
Cherry sherbet is a delightful dessert that has been enjoyed for many years. It has a rich history, with recipes passed down from generation to generation. In this recipe, Aunt Sarah taught Mary how to prepare this cheap and easily made dessert using various berries and fruits as they ripened. Currants, strawberries, raspberries, and cherries were commonly used. The ice used for freezing was obtained from a nearby creamery. The cherries used were not the common sour pie cherries, but a fine, large, red cherry with a mild tartness.

Recipe:

Ingredients:
- 1 quart boiling water
- 1 pound granulated sugar
- 1 tablespoon granulated gelatine
- Juice of half a lemon
- 1 quart pitted cherries

Instructions:
1. In a stew-pan, combine 1 quart of boiling water and 1 pound of granulated sugar.
2. Boil the mixture for approximately 12 minutes. This will create a syrup.
3. Dissolve 1 tablespoon of granulated gelatine in a small amount of cold water.
4. Once the syrup has cooled, add the dissolved gelatine, juice of half a lemon, and 1 quart of pitted cherries.
5. Mix all the ingredients together until well combined.
6. Pour the mixture into an ice cream freezer.
7. Pack the ice cream freezer around with coarse salt and pounded ice. Use a ratio of 1 part salt to 3 parts ice.
8. Slowly turn the crank at first, allowing the mixture to thicken.
9. After a few minutes, increase the speed of turning the crank.
10. Once the mixture reaches a firm consistency, remove the dasher.
11. Allow the water to remain with the ice and salt, as the ice-cold water helps to freeze the sherbet.
12. Fill in more ice and salt around the can in the freezer and on top of the can.
13. Cover the top of the freezer with a piece of old carpet or a towel.
14. Allow the sherbet to stand for a couple of hours until it is thoroughly frozen.
15. Once frozen, the cherry sherbet is ready to be served.

Additional Notes:
- Almost any fruit or fruit juice, either fresh or canned, can be used to make a delicious dessert using this recipe.
- Ensure that the amount of fruit and juice added to the syrup measures exactly one quart.
