Recipe for Deviled Oysters:

Ingredients:
- 2 dozen oysters
- 1 cup rich milk
- 3 tablespoonfuls flour
- Yolks of 2 raw eggs
- 1 generous tablespoonful butter
- 1 tablespoonful finely-minced parsley
- 1/2 teaspoonful salt
- 1/4 teaspoonful black pepper
- Pinch of cayenne pepper
- Fine-dried, well-seasoned bread crumbs (for sprinkling)
- Good-sized, well-scrubbed oyster shells

Instructions:
1. Start by draining the oysters in a colander and chop them rather coarsely. Set aside.
2. In a small bowl, mix the flour smooth with a little cold milk.
3. Place the remaining milk in a saucepan and heat it over medium heat until it starts to boil.
4. Add the moistened flour to the boiling milk and cook, stirring constantly, until the mixture thickens. This prevents burning.
5. If preferred, you can also use a double boiler to cook the mixture while constantly stirring.
6. Add the yolks of eggs, butter, salt, black pepper, and cayenne pepper to the mixture. Stir well to combine.
7. Now, add the chopped oysters to the mixture. Cook for a few minutes, stirring, until the oysters are heated thoroughly.
8. Transfer the mixture to a bowl and let it stand in a cool place until shortly before serving. You can prepare this in the morning and serve it for dinner.
9. Preheat the oven to a hot temperature.
10. Fill the well-scrubbed oyster shells with the deviled oyster mixture. Make sure to distribute it evenly among the shells.
11. Sprinkle the tops of the filled shells liberally with fine-dried, well-seasoned bread crumbs. Season the crumbs with salt and pepper.
12. Place the filled shells on muffin tins to prevent them from tipping over.
13. Bake the oysters in the preheated oven for about ten minutes or until the tops turn brown and the oysters are heated through.
14. Once browned, remove the deviled oysters from the oven and serve them immediately in the shells.
15. When serving at the table, handle the hot shells with a folded napkin to protect your hands.
16. For added flavor and variety, serve the deviled oysters with small pickles, pickled cabbage, or cranberry sauce as an accompaniment.
