3. To prepare the noodles, break the fresh eggs into a bowl. Fill half of an eggshell with cold water and add it to the eggs. Mix in enough flour to form a stiff dough that can be handled easily.
4. Add a little salt to the flour and knead it into the dough.

6. Next, use a sharp knife to cut the rolled-out dough into thin, thread-like slices. Unroll the slices and drop as many as desired into the stew-pan with the meat and vegetables. Cook the noodles for approximately 10 to 15 minutes.
7. Once cooked, place the meat on a platter and serve the remaining soup with the noodles in soup plates.
8. If desired, the remaining uncooked noodles can be unrolled, dried, and later cooked in boiling salted water. Once cooked, drain the noodles and place them in a dish. Serve the noodles with brown butter, containing a few soft, browned crumbs poured over them.
