Meat Pie Recipe

Meat Pie Recipe

History:
Meat pie has a long history dating back to ancient times when people would encase meat in pastry for preservation. The origin of meat pies can be traced back to Middle Eastern and Mediterranean cuisines, where pies were a staple food for armies, travelers, and farmers alike. In medieval Europe, meat pies gained popularity as a hearty and portable meal eaten by both the upper classes and the common folk. Today, meat pies are enjoyed in various forms and flavors all over the world.

Fun facts:
- In England, meat pie is often referred to as "pie and mash," and it is traditionally served with mashed potatoes and parsley sauce.
- The famous Australian meat pie is considered a national dish and is commonly enjoyed with tomato sauce.
- In Northern France, meat pies known as "tourtière" are a Christmas tradition.

Ingredients:
- Left-over beef, lamb, or veal (small pieces, excess fat removed)
- 1 green pepper (seeds removed) cut into strips
- 2 cups of potatoes (diced)
- 1/2 cup of carrots (diced)
- 1 onion (chopped fine)
- 1/4 cup of flour
- Cold water
- 1 cup of flour (for the crust)
- 1 heaping teaspoon of drippings
- Pinch of salt
- 1/4 teaspoon of baking powder
- 1 teaspoon of sugar

Instructions:
1. Preheat your oven to a quick hot temperature.
2. In a large bowl, combine the left-over meat, green pepper, potatoes, carrots, and chopped onion.
3. In a separate small bowl, mix the flour with enough cold water to form a smooth paste.
4. Add the flour paste to the meat and vegetable mixture, ensuring everything is well coated.
5. Transfer the mixture to a baking dish, spreading it evenly.
6. In another bowl, mix together the cup of flour, drippings, salt, baking powder, and sugar.
7. Slowly add cold water to the mixture, about one-third cup, until it forms a pliable dough.
8. On a floured surface, roll out the dough to fit the size of the baking dish.
9. Create steam vents by cutting small holes in the dough.
10. Carefully cover the contents of the dish with the dough, ensuring a tight seal around the edges.
11. Place the meat pie in the preheated oven and bake for approximately 30 minutes, or until the crust is golden brown and crispy.
12. Remove from the oven and let it cool slightly before serving.
