Recipe: Pickles—Spiced Cucumbers

Ingredients:
- 24 medium-sized cucumbers
- 6 medium-sized onions
- 3 red peppers
- 3 green peppers
- 1/2 cup table salt
- 1 quart vinegar
- 1 tablespoon cloves
- 1 teaspoon turmeric powder
- 1 scant cup sugar

Instructions:

1. Start by preparing the cucumbers, onions, and peppers. Peel the cucumbers and cut them into inch-long pieces. Slice the onions and the red and green peppers quite thin.

2. Place all the prepared vegetables in a large earthenware bowl. Sprinkle 1/2 cup of table salt over them, and mix everything well. Let the mixture stand for four or five hours.

3. After the vegetables have soaked for a few hours, transfer them to a colander. Cover the colander with a plate and allow the excess salt water to drain off. Alternatively, you can gently squeeze the vegetables through a cheese-cloth bag to remove the salt water.

4. In a saucepan, combine 1 quart of vinegar, 1 tablespoon of cloves, 1 teaspoon of turmeric powder (dissolved in a little vinegar), and 1 scant cup of sugar. Bring the mixture to a boil and let it simmer for 10 minutes.

5. Add the drained cucumbers, peppers, and onions to the hot vinegar mixture. Allow everything to come to a boil and let it boil for two minutes.

6. While the mixture is still hot, carefully transfer it into sterilized jars. Be sure to leave some headspace at the top. Seal the jars properly to ensure airtightness.

7. Let the pickles cool completely before storing them in a cool, dark place. The flavor of the pickles will continue to develop over time, so it is recommended to let them rest for at least a few weeks before enjoying them.
