8. Reduce a pint of Velute sauce (No. 2) to half its quantity. Add the cuttings of truffles, mushroom trimmings, bits of sweetbread, and a squeeze of lemon juice to the sauce. Let it cool.
9. Mask the skewers with the prepared sauce, ensuring that each piece is coated evenly.
10. Heat butter in a frying pan and quickly fry the skewers until golden brown.
11. In a separate pan, fry a large oval crouton of bread until crispy. Scoop out the center of the crouton and fill it with fried slices of cucumber and truffles boiled in a little Chablis.
12. Place the skewers into the crouton, creating a beautiful and appetizing arrangement.
