History:
Lemon pie is a classic dessert that has been enjoyed for many years. Its origins can be traced back to England, where lemon custard pies were popular in the 19th century. The recipe was brought to America by early settlers and has since become a beloved dessert in many households.

Ingredients:
- 1 lemon (for rind and juice)
- 1 scant cup of sugar
- 2 rounded tablespoons of flour
- 2 egg yolks
- 1 and a half cups of boiling water
- 1 heaping tablespoonful of butter
- 3 drops of vanilla extract
- 2 egg whites
- 4 tablespoonfuls of sugar

Instructions:

1. Preheat your oven to 350°F (175°C).

2. Grate the yellow rind of the lemon using a zester or fine grater. Set aside.

3. Cut the lemon in half and squeeze out the juice. Set aside.

4. In a mixing bowl, combine the sugar, flour, and egg yolks. Beat the mixture until light and creamy.

5. In a separate saucepan, bring the water to a boil. Add the butter and stir until melted.

6. Slowly pour the boiling water and melted butter into the sugar, flour, and egg yolk mixture, stirring constantly.

7. Add the grated lemon rind and lemon juice to the mixture, along with the vanilla extract. Stir until well combined.

8. Pour the lemon pie filling into a pre-baked pie crust. You can use store-bought or homemade crust according to your preference.

9. Bake the pie in the preheated oven for about 30-35 minutes, or until the filling is set and golden brown on top.

10. While the pie is baking, prepare the meringue topping. In a clean mixing bowl, beat the egg whites until they form stiff peaks. Gradually add the sugar while continuing to beat until the mixture is glossy.

11. Once the pie is baked, remove it from the oven and spread the meringue topping evenly over the filling, making sure to seal the edges.

12. Return the pie to the oven and bake for an additional 10-15 minutes, or until the meringue is lightly browned.

13. Remove the pie from the oven and let it cool completely before serving.

This recipe makes two small pies or one large pie.
