Fish Soup Recipe

Fish soup has been enjoyed by people all around the world for centuries. Its origins can be traced back to ancient times, where fish was readily available in rivers, lakes, and seas. The recipe has evolved over time, with each culture adding their own twist to make it their own. Today, I will share with you a delicious fish soup recipe that is both easy to make and full of flavor.

To make this fish soup, you will need the following ingredients:
- 3 pints of fish stock
- 1 pint of milk
- 1/2 tablespoon of cornflour
- Assorted vegetables (such as carrots, onions, turnips, and herbs)
- 6 ounces of fish fillets
- Lemon juice
- Salt to taste
- Chopped parsley for garnish

The first step is to remove any fat from the fish stock. This will help to create a cleaner and lighter soup. Once the fat is removed, pour the stock into a saucepan. Add in six white peppercorns, one sliced onion, a slice of turnip, a fagot of herbs (such as bay leaves, thyme, and parsley), and some carrot. Boil all these ingredients together for about twenty minutes. This will infuse the stock with flavors from the vegetables and herbs.

After the stock has simmered, strain out the vegetables and return the stock back to the saucepan. In a separate bowl, mix a tablespoon of cornflour with the pint of milk until smooth. Add this mixture gradually to the stock, stirring continuously. Continue stirring until the soup reaches a boil. The cornflour will act as a thickening agent, giving the soup a creamy consistency.

Now it's time to prepare the fish. Skin and fillet the fish, then cut it into small dice-sized pieces. Add these diced pieces of fish into the soup and simmer for another ten minutes. This will allow the fish to cook gently in the hot liquid, infusing it with flavor.

Just before serving, add a few drops of lemon juice to brighten up the flavors of the soup. Taste and season with salt according to your preference. Finally, pour the soup into a tureen and sprinkle some freshly chopped parsley on top. This will add a touch of freshness and color to the dish.

Fish soup is not only delicious but also packed with nutrients. Fish is a great source of lean protein and omega-3 fatty acids, which are essential for our overall health. Adding vegetables to the soup further boosts its nutritional value, providing essential vitamins and minerals.
