Vienna Cherry Cake, also known as Wiener Kirschtorte in German, is a classic dessert that originated in Vienna, Austria. This delightful cake is made with a combination of soaked bread, milk, eggs, sugar, butter, raisins, currants, and lemon juice. Ingredients:
- 1 pint of stale bread
- 1 quart of milk
- 4 egg yolks
- 1 cup of sugar

- Juice of 1/2 lemon
- 3 tablespoonfuls of powdered sugar
- Cherry jelly (for spreading)
- 4 egg whites

Directions:

1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

2. In a large bowl, combine the stale bread and milk. Allow the bread to soak in the milk for about 15 minutes until it becomes soft and mushy.

3. In a separate bowl, whisk together the egg yolks and sugar until light and creamy. Add the melted butter and lemon juice. Mix well.

4. Drain any excess liquid from the soaked bread, and gently fold it into the egg yolk mixture. Add the raisins and currants. Stir until all the ingredients are well combined.

5. Pour the batter into the prepared cake pan, spreading it evenly. Bake in the preheated oven for approximately 30-35 minutes, or until the cake turns golden brown and a toothpick inserted into the center comes out clean.

6. Meanwhile, in a clean bowl, beat the egg whites until foamy using an electric mixer. Gradually add the powdered sugar, beating continuously, until the mixture forms stiff peaks.

7. Once the cake is baked, remove it from the oven. Spread a layer of cherry jelly over the top of the cake.

8. Next, evenly spread the beaten egg whites over the cherry jelly layer. Use a spatula to create peaks and swirls on the meringue topping.

9. Return the cake to the oven and bake for an additional 10 minutes, or until the meringue is golden brown.

10. Remove the cake from the oven and let it cool completely in the pan before serving.
